Darius Plazewski Gives Speyside New Whisky Distillery
A new distillery has been launched by international businessman Darius Plazewski. This Speyside-based distillery is one of the six distilleries that make up the UK’s Bimber Distillery. The new factory has a production capacity of 200,000 liters per annum and a revenue forecast of around 100,000 liters in its first year.
Darius Plazewski, founder of Bimber Distillery, built Dunphail Distillery in 2023. Besides employing five people, the distillery has an on-site visitor center and shop.
It is rumored that Dunphail Distillery’s malting floor is the first built in Speyside since 1898. It features its own malting floor, traditional kiln, and direct-fire stills that were converted from an existing farm steading. Dunphail Distillery will produce both peated and unpeated single-malt whiskies, with all maturation occurring in-house. It is the first distillery-based malt floor to be built since 1898 in Speyside.

Founder and master distiller Dariusz Plazewski said:
It has long been my calling to produce whisky that has been shaped by the richness of distilling heritage.
“Constructing the distillery over the last 18 months has been both a lifelong dream and one of the biggest challenges of my career. But that time and effort have been well worth it – our first batch of new make spirit is simply astonishing and unlike anything I’ve tasted to date. It is incredibly fat and fruity and already packed full of the personality derived from our traditional production processes.”
The Dava Way has released eight bottlings available directly to consumers via its website and onsite shop. Matt McKay, director of whisky creation and outreach, said at the time:
