Milestone Technology Set to Eliminate Whisky Aging Process
What could be a possible technological breakthrough has been used by Milestone Beverages HK Ltd to reproduce historic whisky flavors and essence. Known as the molecular technology, the distillery has created its new Stateless brand.
According to Milestone, the science of molecular recomposition might just be able to reshape the industry’s investment in time and cask. by applying the procedure to its Stateless brand, the distillery has analyzed and replicated historic Bourbon whiskey compositions. The company implemented the technology identifying the specific molecules responsible for their flavors, textures, and aromas.
How Molecular Technology Works
Molecular technology allows producers to obtain precise control over each aspect of the flavor profile, from the woody and smoky notes to the fruity, spiced, and vanilla essences. Stateless is crafted from a concoction of traditional spirits where key characteristics can be fine-tuned.
One of the most impacting features of the new technology is the access it provides to old forgotten whiskies, which otherwise are rare and expensive. In the press release, Milestone touted new horizons for the industry.
According to Milestone, the new technique allows for the “democratization of flavors” as previously unaffordable whiskey now becomes affordable. The techniques allow for mass experimentation to further innovate and perhaps resurrect old formulas.
Damith Weerakoon, marketing and operations manager at Milestone Beverages, described the launch as “a significant moment in the beverage industry”.
Weerakoon said: “We’re not just creating a new line of whiskies, we’re taking the traditional, the non-traditional, the circus ‘freaks’ and the classic entertainers, all the diverse ingredients and processes to pay homage to tradition while pushing the boundaries of what’s possible with modern science. This is where tradition meets innovation.”
Molecular technology allows Milestone to produce whiskey with a reduced environmental impact. Unlike traditional whiskey which requires water, grain, barrel storage space, and a lengthy maturation period.
However, Milestone is not the creator of the technology. The first company to use molecular technology was Endless West in 2018 for its Glyph whisky, created to taste like aged whisky without maturing years.
