Buffalo Trace Summons Baijiu-Style Spirit
Kentucky-based bourbon-maker Buffalo Trace has summoned up a baijiu-style spirit as part of their Experimental Collection. Baijiu spirit is similar to bourbon, but uses sorghum and peas instead as their fermented grains.
The Buffalo Trace baijiu-stule spirit was made using the traditional baijiu ingredients of sorghum and peas, then was aged for 11 years in three separate American oak casks – uncharred, charred and toasted white oak – before being bottled at 45% alcohol by volume [90 proof] and is said to contain notes of chocolate, dark cherries and toffee.
An “extremely limited” number of bottles of Buffalo Trace Experimental Collection Baijiu-Style Spirit is being made will be available in May 2021 for $47 per 375ml bottle.
