Copenhagen Matures Whisky in Aquavit Casks
Copenhagen Distillery and Harvey Nichols have released a whisky cask-aged in aquavit as part of the Rare Collection. The partnership is dedicated to experimenting with new spirits and bottling procedures.
ideally, the spirit delivers an impressive flavor. A dark honey-colored whisky with notes of Scandinavian caraway, fennel, honey, grains, and oak. With hints of anise, dried papaya, dried lemongrass, and green leaves. The finish consists of oak tannins, cedar trees, and leather.
In its partnership with the luxury department store, Copenhagen emphasizes the commitment to ‘continuously evolving’ and reshaping the whisky industry. This is a ‘milestone moment’ for the self-proclaimed ‘rebellious’ distillery.
Copenhagen Partners with Harvey Nichols
Örn Ólason, co-founder and brand director at Copenhagen Distillery, was hyped on the partnership. “This has been an incredibly exciting opportunity for us. We were delighted to create an exclusive rare whisky for Harvey Nichols, which we matured in our aquavit casks to create a distinctive, specialized taste.
“This product is a testament to our innovative, scientifically driven production methods, and it’s wonderful to be able to bring our passion to Harvey Nichols’ premium customers.”
It is the first collaboration between Harvey Nichols and Copenhagen in the UK, which marks a departure from traditional whisky norms. The whisky is available exclusively through Harvey Nichols at the Fifth Floor Bar in their Knightsbridge flagship store.
Nick Larsson-Bell, senior spirits and beer buyer at Harvey Nichols, said: “We are thrilled to be working with Copenhagen Distillery and the incredible world-renowned master distiller Lasse Öznek to launch a truly artisan whisky exclusively for our customers. These aren’t your classic whiskies or your classic whisky distillers, which makes this collaboration so exciting and unique.”
