The Sherry Collection – Tomatin Expands Sherry Cask Culture
A popular Sherry cask culture has been shaping a new trend in the single malt whisky industry jolting brands to wake up. Although Tomatin has historically used this type of cask, it has created a new series expanding its usage. The new collection employs different casks to extract a unique blend.
Dubbed The Sherry Collection, the new series was matured in Manzanilla, Palo Cortado, and Pedro Ximénez (PX) butts. While most distilleries have used similar aging containers, it is just standard procedure. The Sherry Collection, on the other hand, was designed to honor modern Sherry culture. Which is booming thanks to the tapas scene and consumers’ evolving food and drink preferences.
Tomatin Debuts New Sherry Collection

The first whisky in the range, The Manzanilla Edition, was distilled in 2014 and is finished in Manzanilla butts for two years. Its aroma is reminiscent of smoked bread and salted popcorn, along with dried fruits, chamomile tea, grapefruit, maple syrup, and salted walnut.

“The collection provides a real journey through Sherry, highlighting our cask management expertise, to deliver a mixture of expressions, all grounded with our classic Tomatin profile.”
Interestingly, The Palo Cortado Edition (46% ABV) has been aged for three years in Palo Cortado butts after it was distilled in 2008. Its nose has notes of cinder toffee and dried oranges, followed by flavors of milk chocolate, toasted fruit loaf, and Brazil nuts.
There is also a Pedro Ximénez Edition (46% ABV) that has been aged for 17 years, including an eight-year stint in PX casks. A nose of sticky toffee pudding and espresso is followed by lemon curd, golden syrup, dates, dried figs, and muscovado sugar on the palate.
Earlier this year, Tomatin launched a sherry cask aged 12-year-old single malt that was non-chill filtered and bottled at natural color.
