Stirling Distillery Makes Historic Debut
Stirling Distillery has carved its space in Scottish whisky history by re-igniting the whisky production flames in Stirling after 171 years. The has been without a distillery for more than seventeen decades.
There hasn’t been a fresh batch of whiskey distilled in the city since 1852 when the original Stirling Distillery closed its doors. The first brewing mash was carried out on October 3, 2023, with the first gravity reading taken at the end of the day.
The Stirling Whisky Journey
During the next few months, the distilling team will develop the whisky’s distinctive lowland flavor through small-batch distilling. In 2021, the distillery launched its initial expression, the Sons of Scotland independent bottling range. The release served as pivotal point in their whisky journey.
Featuring whiskies from Highland, Speyside, Lowland, and Islands regions, the limited edition collection honors Stirlingshire’s rich whisky making heritage. This is one of the best way to open a whisky library, showcasing the history of a people.
In addition, the company did not start out producing whisky, afterall the aging process requires at leats three years. Soon, they opened a visitor attraction and an award-winning gin distillery in Stirling in 2019. They specialize exclusively in gin, with a goal of expanding into whisky as the business grows. This has come to pass.
Cameron McCann, co-founder of Stirling Distillery, discussed their whisky success:
“For us, the essential elements in creating a truly special whisky are simple; from using only the best water, yeast and malted barley to the care that goes into hand selecting the best quality casks. This will develop the rich flavours. We’re excited to be embarking on this whisky journey”.
A raft of Whisky releases are set to start in late 2026, including the limited edition VI Casks for King James six bottle set. Only 300 bottles will be produced, and they will be released biannually over a three-year period.
